Warming winter porridge


Morning everyone!


I have to admit that porridge is one of my favourite things on the planet and I think I have a serious addiction to it! I love the creaminess of it and that it's so easy to make healthy- which of course is a must! You can add berries and fruits to nut butters and cinnamon, and even nuts and nutritious seeds to give it an extra crunch! I normally top mine with goji berries, blackberries, blueberries, pumpkin seeds and almond butter but there's such a wide range of other toppings you can add- you can even change toppings everyday so you never get bored!


Also, it's so quick and easy to do so it's great if you haven't got much time in the mornings! I followed Ella Woodward's (or Deliciously Ella) 'super speedy porridge' recipe but slightly adapted it and it's my favourite thing ever! For this particular porridge I mixed in flax seeds, soaked chia seeds and cinnamon into the porridge and topped with a homemade smoothie and fresh fruit.



Ingredients:
2/3 of a cup of oats (100g)
 2/3 of a cup of boiling water (200ml)
1/3 of a cup of unsweetened almond milk (100ml)
1 teaspoon of chia seeds (soaked in water)
1 teaspoon of flax seeds (milled)
1 teaspoon of cinnamon or almond butter

Optional
Kiwi
Berries
Goji Berries (dried)

For the smoothie
1 banana
1 handful of frozen berries (or normal)
1 handful of spinach (completely optional, it's tasteless and is SO good for you)
1 teaspoon of almond butter
coconut water (the amount is up to you, it depends how thick you would like the smoothie)




First soak a teaspoon of chia seeds with about 3/4 teaspoons of water (the chia seeds and water make a gel which is easier to mix into the porriage).
Next place the oats in a saucepan with the boiling water and then let it sit with the lid of the pan on for 10 minutes.
While the oats are soaking you can make your smoothie for the topping. This is so good for you and also makes the porridge taste absolutely amazing! Simply place all your ingredients into a blender and blend!
Once the oats have soaked and are soft, put the pan on a hob and heat it up with the almond milk for 3-4 minutes while stirring it. 
Now stir in the chia gel, flax seeds and cinnamon/almond butter. 
Serve in a bowl and top with your favourite toppings!
